Birthday Cake Blondies
Traditionally, people like to celebrate their birthdays with party-sized, layered cakes simply known as birthday cakes. They can come in every shape, flavor, and size one could ever need for their special day. However, what if you are not a fan of traditional dessert cake? These birthday cake blondies are a favorite replacement of mine for this! Soft, fluffy squares that are perfect for parties and personal enjoyment. There are a few different ways to create these since the recipe is so simple in nature, but I would like to share what has personally tasted best to me when I have made them.
Ingredients needed:
- All-Purpose flour
- Granulated sugar
- Kosher salt
- Baking powder
- Brown sugar
- Unsalted butter
- Eggs
- Vanilla extract
- White chocolate chips
- Rainbow sprinkles
In a medium bowl combine 1 ½ cups of all-purpose flour, ½ tsp of kosher salt, and 1 tsp of baking powder. Set that aside and move onto your wet ingredients.
In a larger bowl, whisk together ½ cup of melted unsalted butter (I prefer browned butter but regular melted works fine too), ¾ cup of brown sugar, and ½ cup of granulated sugar together until combined. When mixed, add 2 large eggs, one egg yolk, and 1 tbsp of vanilla extract. Beat the mixture until it is lighter.
Then gradually add your dry ingredients to your wet ingredients, mixing until well combined and smooth. Then fold in ½ cup of rainbow sprinkles as well as ½ cup of white chocolate chips.
Preheat your oven to 350 degrees and then grease an 8”x8” square cake pan. Then line your pan with parchment paper and grease one last time, set this aside. Transfer your batter to the pan and sprinkle the top with more of your rainbow sprinkles.
Bake for 30-35 minutes until the top and edges are golden and set or until you can slide a toothpick in, and it comes out clean. Remove from the oven and allow it to cool for 45 minutes before you slice and remove the blondies.
The blondies can be stored in an airtight container for up to 3 days, but I’m sure these would be devoured any event you take them too (or for enjoyment at home) before you can save them.
